This family-run mobile coffee trailer has quickly become a favorite for locals, families, and anyone who believes coffee tastes better when it’s shared with kindness. As a Colorado Springs photographer, I love featuring small businesses that make our city feel like home — and Good Gracious Coffee embodies that perfectly.

About Grace

Behind the counter — or in this case, the coffee trailer window — you’ll find Grace Boudoin, the heart and smile behind Good Gracious Coffee. Grace and her husband Zac moved to Colorado Springs from Mississippi in 2024, bringing with them a deep love for community and connection.

Their little trailer is more than a business; it’s a reflection of the home they left behind. What began as a longing for shared spaces and meaningful conversation has grown into a thriving part of the Colorado Springs community. Each latte, each smile, and each conversation reminds them why they started — to create a place where everyone feels seen and cared for.

From a Mississippi Home to a Colorado Springs Coffee Trailer

What inspired you to start Good Gracious Coffee in Colorado Springs?

Grace and Zac’s journey began in Mississippi, where their home was known as a safe haven — full of laughter, comfort, and connection. When they relocated to Colorado, they missed that sense of belonging deeply. It wasn’t the home itself they longed for, but the people and memories inside it.

So, they decided to recreate that same spirit in a new way — by serving coffee with purpose. “It’s been beautiful and vulnerable to put ourselves out there in a city we only knew two people in,” Grace shared. “We are so grateful for this community and genuinely excited to meet new people every single day.”

Serving Coffee with Kindness

Your mission talks a lot about kindness and community. How do you see that play out day-to-day at the trailer?

Kindness is the foundation of everything at Good Gracious Coffee. From making sure every order is just right to remembering each customer’s name, Grace strives to create meaningful interactions with every cup.

That kindness has come full circle. After experiencing a personal loss earlier this year, the support they received from customers was overwhelming. “People showed up with devotionals, flowers, fresh baked bread, and gift cards,” Grace said. “It brings tears to our eyes even now. This isn’t just a small business — it’s a family.”

Creating Moments Over Coffee

Do you ever see families or friends turning a coffee stop into a memory?

“All the time!” Grace said. Despite operating out of a mobile trailer, she constantly witnesses little moments of connection — best friends road-tripping from Denver to visit, new moms celebrating their first outing with their baby, and couples setting up a few chairs nearby for a cozy brunch date.

“It’s so touching to see people take time to connect,” Grace shared. “That’s exactly what this trailer is about — creating space for people to slow down and share a moment together.”

Finding Comfort in the Cup

If you had to pick one go-to item from your menu, what would it be?

“That’s such a hard question!” Grace laughed. “We put a lot of time into our rotating monthly menu, but if I had to pick, it would be the Chocolate Truffle Latte — it’s caramel and chocolate sauce in a latte, perfectly sweet, creamy, and still strong on coffee flavor.”

For new parents balancing life with a newborn, what’s your favorite comfort order?

“I’d go with one of our specialty lattes with an extra shot,” Grace said. “And grab a bottled coffee to-go! You can keep it in the fridge for those middle-of-the-night wakeups — café-quality coffee whenever you need it most.”

Connection That Lasts

Community is such a big part of both coffee and photography. How do you hope Good Gracious Coffee helps families feel connected to Colorado Springs?

“It’s all about being part of something bigger,” Grace explained. “When you get coffee at Good Gracious, you’re supporting a local family right here in the Springs — and we don’t take that lightly. We love learning about our customers, their families, their needs, their dreams, and cheering them on.”

That heart for connection shows in everything they do. “We just love our customers and learning more about them,” Grace said. “It’s not uncommon for us to hear, ‘This is the best coffee I’ve ever had,’ at least once a week!”

A Favorite Memory

What’s been one of your favorite snapshot or memory since opening the trailer?

Grace didn’t have to think long. “Definitely the first time we operated after our loss earlier this year,” she said. “When I opened the window, there was a full line of regulars — many had driven from across town just to come support us. They showered us with love and grace for a slow-moving line that day. It reminded me that this isn’t just a business — it’s truly a community.”

“Come grab a drink!” Grace said with a smile. “Whether it’s coffee, matcha, dirty soda, or hot chocolate, we’d love to see you.”

What’s your vision for the future of Good Gracious Coffee?

“We’d love to expand into a brick-and-mortar café while keeping the trailer on the road,” Grace shared. “That way, we can offer consistency for our regulars while continuing to reach new communities. We have some exciting things in the works, so stay tuned!”
